Schedule of Chefs

Neal Fraser, former chef of Grace, just finished an amazing couple of nights at Test Kitchen with winemaker Joshua Klapper of La Fenetre Winery at his side. Ricardo Zarate will be back at the helm of the Test Kitchen tonight, September 2nd and 3rd, previewing Anticucho’s menu.

Vartan Abgaryan, of “A Restaurant” in Newport Beach, will be in the Test Kitchen September 4th with a five course prix fixe tasting menu at $50.00 per person. Abgaryan’s menu will feature bay scallops, cauliflower soup, New Zealand turbot, pork, and a chocolate tart.  Abgaryan will serve bar bites priced between $7.00 and $11.00; including pork belly, hamachi, and chicken liver.

September 5th-6th George “TiGeorge” Laguerre will be cooking up a family style Haitian Feast for $25.00. Ti-George was born in Port-De-Paix, Haiti in 1953 and came to the United States in 1970. Ti-George is not a classically trained chef; everything he knows was taught to him at the age of 8 by his grandmother, a Haitian street vendor. After a fire destroyed his restaurant while taking part in Haiti relief efforts TiGeorge says his goal with Test Kitchen is “to expose more people to Haitian cuisine and to open more doors so I can put my TiGeorges’ Chicken back together again.”

Varnish mixologist Eric Alperin will be mixing up Barbencourt rum punch and classic rum cocktails to compliment TiGeorge’s Haitian inspired menu. TiGeorge’s menu will include Haitian favorites such as Acra, the national dish of Haiti, Pikliz, a spicy cabbage dish, deep fried plantains, Haitian aphrodisiac conch or lambi, rice and red beans sautéed in garlic, festive goat meat, and sweet plantains with caramel.

will take over again September 7th serving an ancient Inca menu including such items as sundried potatoes, quinoa, and pachamanca, a traditional peruvian meat dish slow cooked with the aid of hot stones.

And Red Medicine, featuring Jordan Kahn, returns with an all new Beef menu September 8th – 11th. Seven courses of beef is a traditional Vietnamese banquet usually served at special occasions like weddings and holidays.  As with the restaurant, this will be a modern interpretation of the meal; diners will be served dishes that embody the spirit of the occasion, using more luxurious cuts of beef, rather than the traditional staples.

Test Kitchen is located at 9575 West Pico Blvd. LA 90035. Dinner is served beginning at 6:00pm, with the last seating at 10:30pm. Test kitchen is the product of many people’s efforts, but the concept of Bill Chait and Brian Saltsburg.  Test kitchen is a showcase for chefs by restaurateurs and allows for experimentation and testing of new ideas and concepts.  Visiting chefs will be serving dishes they are working on for future restaurant projects.  Mixologists provide innovative pairing opportunities and avenues to express their craft.  Each chef will be working alone or in consultation with Ricardo Zarate, who is currently finalizing his own restaurant.
