Crispy pig ear + fried Jidori Hen Egg + mojo

Brussel Sprouts + pancetta+ sweet peppers

mussel “pot pie”

little gem, anchocy vinaigrette, croutons

wild boar ragu + fresh papardelle + pecorino

red lentils, baby spinach, mushroom gravy

dug leg confit + spaetzle + flowering kale

line caught big eye tuna, sunomono, wasabi

sonoma lamb “tagine”, couscous, dates
