Corn in Mexico isn’t and they refuse to import U.S. corn for it will contaminate their long tradition of hybridized corn they’ve been harvesting for thousands of years. One of the most noticeable differences is the texture. Corn tortillas bought in Mexico comes soft, chewy, and never hardens. The store quality bought in supermarkets are terrible! They’re hard, have fillers, additives, and preservatives.
