Winemaking Notes

The grapes used to produce our 2007 Vigilance Cabernet Sauvignon were picked from our vines that typically have small yields with intense varietal character in and around the Red Hills area of Lake County. Helping to create a multi- layered wine with classic Cabernet character, the fruit was picked at the peak of ripeness, barrel fermented in French and American oak for 18 months.

Aroma: Black Cherry, Mocha, Toasty oak
Flavor: Ripe Cherry, Cocoa, Currant and a hint of Coffee Bean
Texture: Rich and Ripe with a lush tannin balance
